First cookies recipe here on the blog! And I have so many other cookie recipes that I want to share with you, but all in good time!
As I write to you at the moment and as I look at the pictures, what I really wanted was a plate of half a dozen of these cookies and a glass of milk (just like the american tradition).
These cookies made the delight of so many people, just for you to know, immediately after the first batch that I made people asked me to make more of these yummy little ones. And maybe you won’t believe it, but at the first time, I made a huge single cookie (like a cookie monster) because I didn't gave the right space between the dought and it all assembled together. Even with this mistake, everyone asked me for more!
The first time I cooked them I used coconut oil and on the second one I used butter, but I can assure you that the coconut oil gives them an irresistible taste! The preparation is super simple, you will not need to wrap and spread the dough like most cookie recipes, you just need a cookie scoop (or a small spoon of ice cream) to arrange the cookie dough on the cookie sheet. And finally you will have to wait 12 to 15 minutes while the cookies are in the oven .. True, they only need this time to cook and for you to eat them!
Ingredients
- 1/2 cup. coconut sugar - 3/4 cup. brown sugar (or yellow) - 1 tsp. salt - 1/4 cup. coconut oil - 1/4 cup. vegetable milk (we use almond) - 1 tsp. vanilla extract - 1 1/2 cup. oatmeal flour - 1/2 tsp. baking powder - dark chocolate chunks
Preparation
Mix the coconut sugar, the brown sugar, the salt and the coconut oil and beat very well with a whisk until a homogeneous mixture is obtained, very creamy and with bubbles. Add the vegetable milk and the vanilla extract. In a medium bowl, place the oatmeal flour and the baking powder and mix well. Add to the other mixture, add the chocolate chunks and wrap everything very well. Place sticky film on the bowl and take it to the refrigerator for 30 minutes to gain consistency. In a tray, put the parchment paper* and remove the dough from the refrigerator. With the aid of a cookie scoop (or a small spoon of ice cream) arrange the dough on the tray, taking care to move away the balls from each other. If necessary, use multiple trays or make several batches. Bake for 12-15 minutes at 180ºC (preheated). Remove from the oven and let cool until you can taste the first :)
Here's a tip: go with milk or coffee, it's amazing!
* If you have one of those silicone oven mats, use so that the cookie dough does not drain as much.
